I think by now people know the weird tradition in Lubbock where students toss tortillas in the air/onto the field during Texas Tech games. Don’t worry, there’s no real reason for this other than the plethora of tortillas in Lubbock.
Why you would throw a very good and useful tortilla is beyond me. They’re one of the most versatile food items in the world and perfectly encase whatever filling you want to end up oozing out of them.
So… let’s use tortillas to eat?
Quesadillas are a wonderfully diverse food. You can make a simple cheese quesadilla for a snack or load in meats and veggies to make a whole damn meal in one folded tortilla.
