In a simple, generator-powered kitchen in central Rio de Janeiro’s vibrant, gritty neighborhood of Lapa, Massimo Bottura has set up camp with some of the best chefs in the world. With a mission to eradicate food waste and hunger, Bottura’s community kitchen, Refettorio Gastromotiva, uses food surplus from the Olympic venues to feed locals in need. “Food can be a bridge between rich and poor, hunger and waste,” says Bottura, whose Modena, Italy, dining room Osteria Francescana was recently crowned the world’s best restaurant.
